At last ! Someone who feels my pain at not being able to get a corned beef pie outside of Wales where no self respecting buffet table would be without one. During lockdown I tried to make my own. It wasn't bad but the pastry wasn't as good as my mam used to make: https://www.mydeliciousdevon.com/2020/03/09/easy-as-pie/

I must be older as I remember when Greggs came to Wales and bought out our local bakery chain - whose name I forget. Moving North I had a similar experience - why were the rolls soft rather than crusty? Where were the Chelsea buns - for some reason, something every bakery in Newport seemed to do.

As for Parkin - I recommend Morrisson’s who sell the same pies, cakes and Seabrook’s crisps in East London as West Yorkshire.
